Delaware North Australia is hiring a full-time Sous Chef to join our team at Marvel Stadium. This is an exciting opportunity to lead a high-performing kitchen team in one of Australia’s most iconic venues. You’ll play a key role in delivering exceptional food experiences across retail outlets and functions, with a strong focus on production and operational excellence. What will you do?
- Lead daily kitchen operations across high-volume production and event service, ensuring consistent food quality and presentation
- Supervise and motivate a team of 15–20 casual staff, fostering a positive and productive kitchen environment
- Support and maintain HACCP compliance and food safety standards across all culinary activities
- Contribute to creative menu development and execute engaging retail food concepts
- Manage budgets, control labour and food costs, and coordinate with suppliers for quality sourcing
- Promote sustainability by reducing food waste through efficient planning and preparation
More about you
- Diploma in Professional Cookery Level 5 or equivalent and Minimum Certificate III in Commercial Cookery. Food Safety Supervisor Certificate desired
- Minimum of 3 years of monitoring food and labor cost, menu development, and costing
- Proven background in ordering and inventory procedures including cost controls and handling invoices
- Proficiency in menu development and stock management and experience using business technology such as stock control systems, spreadsheets, and accounting systems preferred
- Experience in both retail and function catering environments is highly regarded
- Work a rotating roster, including weekends and nights, based on event schedules
