For Jessica, Director of Food and Beverage at Mardi Gras Casino and Resort, her story is a shining example of dedication, resilience, and leadership. Here is a closer look at Jessica’s journey and advice for others.
How did your career begin, and what led you to where you are today?
“I began my apprenticeship training at Mardi Gras back when it was still called Tri-State Greyhound Park. This was where I was assigned as part of the culinary program I was enrolled in. My first day on the job was just two weeks after I graduated from high school.”

Is there a particular project or accomplishment you are most proud of?
“I’m incredibly proud of how far I’ve come. I started out as a scared, naive 17-year-old on my first big adventure, making salads on the pantry side of the restaurant. Today, after years of dedication and growth, I’ve proudly served as Director of Food and Beverage for the past 12 years. This role has also given me the opportunity to raise two wonderful children, who are now grown and forging their own successful paths in life.”
What has helped you grow as a leader? What advice would you offer to others looking to develop leadership skills?
“Continuous education and professional development have also been incredibly valuable. I try to make it a point to attend the National Restaurant Association (NRA) Show in Chicago each year and volunteer for as many events as possible to support other properties. It’s both eye-opening and educational to see how other Delaware North locations operate, and I’ve been able to bring back several ideas and improvements to implement on my own. I also learned early on that earning and keeping your team’s respect means being willing to roll up your sleeves and work alongside them when needed. It shows them that you’ve got their back—and that you’d never ask them to do something you wouldn’t do yourself.”

What motivated you to choose your current career path, and has your motivation changed over time?
“It feels like a natural progression from where I began. I worked my way up. I started as a Cook, then moved into roles as Supervisor, Sous Chef, Executive Chef, and eventually assistant director. Stepping into this position felt like the obvious next step in my journey.”
